Ingredients
2/3 cup (5 oz) freshly shredded cheddar cheese (hard)
2/3 cup (5 oz) freshly shredded cheddar cheese (soft)
1 Tbsp cornstarch
1 Tbsp butter
1 Tbsp vegetable oil
1 small yellow onion – minced
3 cloves garlic – minced
4 tbsp Mama Lam’s Curry Paste
12 oz can evaporated milk
1/4 bunch of cilantro – chopped
Directions
Mix shredded cheese and cornstarch until evenly coated
Heat pan with butter and oil
Once butter is melted, put onion and garlic in until onion start to soften
Add curry paste in and saute for a minute
Pour in evaporated milk and add the shredded cheeses
Cook on LOW heat until cheese is melted and the dip starts to thicken
Once all the cheese has melted, mix in the chopped cilantro
