Malaysian Lemongrass Peanut Meatballs

Ingredients:
- 50 grams of fresh chopped lemongrass
- 1 lb ground pork
- 6 tablespoons of Mama Lam’s Peanut Satay Paste
- Dash of soy sauce
- Scallions (as garnish)
- coconut milk (optional for sauce)
Instructions:
- Mix ingredients until it’s well blended.
- Make 10 equal round balls. Cover with plastic wrap and let it marinate 1 hour or overnight for more flavor.
- Preheat oven at 400F.
- Heat pan. Sear the meatballs on each side for about 1 minute.
- Once oven is preheated, put meatballs in the oven for 10 minutes. Ensure internal temp is at 160F!
- Remove from the oven. Plate and garnish with scallions.
- Optional: Make a peanut sauce! Mix 2 tablespoons of peanut satay paste with 4 oz of coconut milk.
