Peanut Satay Chili

Malaysian Lemongrass Peanut Meatballs

Ingredients:

  • 2 tablespoons oil
  • 1 onion (diced)
  • 14 tablespoons Mama Lam’s Peanut Satay Paste
  • 1.25 lb of ground beef
  • 0.5 lb of ground pork
  • 1 tomato (diced)
  • 1 pepper (sliced)
  • 4 oz coconut milk
  • 10 oz broth

Instructions:

  1.  Heat oil on “Sauté” setting. Once heated, sauté onions.
  2. When onions are golden, add ground meat, breaking it apart, and cook until browned (about 5 minutes). Drain excess fat if needed.
  3. Stir in the Peanut Satay Paste and cook for 1 minute.
  4. Mix in tomatoes, peppers, coconut milk and broth. 
  5. Bring to boil. Cover with lid – make sure venting is sealed. Let it cook on the “slow cook” function for 35 minutes. Let it natural release for 10 minutes and then quick release.
