Malaysian Lemongrass Peanut Meatballs

Ingredients:
- 2 tablespoons oil
- 1 onion (diced)
- 14 tablespoons Mama Lam’s Peanut Satay Paste
- 1.25 lb of ground beef
- 0.5 lb of ground pork
- 1 tomato (diced)
- 1 pepper (sliced)
- 4 oz coconut milk
- 10 oz broth
Instructions:
- Heat oil on “Sauté” setting. Once heated, sauté onions.
- When onions are golden, add ground meat, breaking it apart, and cook until browned (about 5 minutes). Drain excess fat if needed.
- Stir in the Peanut Satay Paste and cook for 1 minute.
- Mix in tomatoes, peppers, coconut milk and broth.
- Bring to boil. Cover with lid – make sure venting is sealed. Let it cook on the “slow cook” function for 35 minutes. Let it natural release for 10 minutes and then quick release.
