Vegetarian Curry Gravy & Mashed Potatoes

Curry Gravy
1/4 cup (2 ounces or 4 tablespoons) unsalted butter, cut into 4 pieces
1 tablespoon all-purpose flour
2 tablespoons curry paste
1 cup broth or stock, mushroom or vegetable
1 tablespoon coconut milk

Mashed Potatoes
375 grams potatoes
1/2 cup milk
1 tablespoon butter


  1. Boil potatoes for about 15-20 min, or until soft

  2. In the meantime, melt butter in a pan

  3. Add flour, broth, curry paste and coconut milk

  4. Simmer on low heat until it thickens and then set aside

  5. Once the potatoes are softened, drain the water

  6. Add the milk and butter and mash it up
