Vegan Curry Mac & Cheese

Mama Lam’s Vegan Curry Mac & Cheese with broccoli

Ingredients

1 cup Pasta – cooked to al dente
12 oz Coconut milk
1/4 cup Cashews unsalted
1/4 cup Peanuts unsalted
2/3 of 7 oz Daiya cheddar cheese block
2 tbs Mama Lam’s Vegan Mild Curry Paste
Half head of broccoli – chopped
Cilantro – chopped

Ingredients include Mama Lam’s curry paste, cashew nuts, peanuts, coconut milk, Daiya Cheddar Cheese, pasta and broccoli

Directions

  1. Cook pasta per box directions.

  2. Preheat oven to 350 degrees F.

  3. Boil coconut milk with the nuts for 8 minutes.

  4. Slice the cheese block into 6 slices.

  5. Place the nuts and coconut milk mixture, 3 slices of the cheese, and curry paste in the blender and puree until smooth. If needed, add 1/4 cup of water to make it smoother.

  6. With a grater, shred 1 slice of the cheese and set aside.

  7. In a baking pan, mix the cooked pasta, chopped broccoli and cheese mixture. Then, top with the shredded cheese.

  8. Put it in the oven and bake for 10-15 minutes.

  9. When you pull it out of the oven, top it with chopped cilantro!
