Stir-fry Curry Udon Tofu

Stir-fry Malaysian Curry Udon

Servings: 2
Prep Time: 15 minutes
Cook Time: 10 minutes

Ingredients:
1 packet of Udon
1 tsp olive oil
1 tbs Sesame Oil
2 large eggs
212 grams of firm tofu
6 oz bean sprouts
2 tbs Mama Lam’s Curry Paste
Salt (if preferred)

  1. Boil the udon as directed

  2. Drain and run through cold water. Set aside

  3. Scramble the eggs

  4. Dice up the tofu

  5. Reheat pan with olive oil. Once heated, cook the eggs halfway, then set aside

  6. Heat pan with sesame oil and put the tofu in the pan and pan fry until golden. If preferred, sprinkle some salt on the tofu before setting aside.

  7. Reheat the pan with oil and sautee the bean sprouts.

  8. Put the udon, tofu, and curry paste into the pan and continue to sautee with the bean sprouts.

  9. Add the eggs at the end and cook until eggs are fully cooked.
